SWEETS FOR THE SWEET

Chocolate Peppermint Cupcakes
Makes about 24 cupcakes

When the two flavors of peppermint and chocolate combine, it reminds me so much of Christmas. Must be because of the peppermint mochas that are prevalent during the Winter. Yes, you can get a peppermint mocha any time of year, but for some reason, it seems a little bit more magical during the Holidays. I have taken these same flavors and put them into a cupcake. I don’t have time to make everything from scratch. But with the help of cake mix and frosting in a tub, it’s a simple recipe and I hope you enjoy it.

Ingredients:

1 box Chocolate Cake Mix (**Refer to the mix for any additional ingredients needed, usually water, oil, and eggs)
6+ Candy Canes, crushed (or you can use peppermint candies)
1 tub store-bought Chocolate Frosting
Peppermint Extract (optional)

Directions:

Preheat oven and prepare the cake mix according to the directions on the box. Add some of the crushed candy cane pieces, leave enough to sprinkle on top of the cupcakes later. At this point, you can add up to 1 tsp of Peppermint Extract, if desired.

Prepare a muffin pan with paper liners. Pour batter evenly into each paper liner, filling a little over halfway. This should make around 24 cupcakes.

Bake the cupcakes according to the cake mix’s package directions for cupcakes.
Pull them out of the oven when they are done. Test for doneness using a toothpick or bamboo skewer. Stick it into the cupcake and if it pulls out clean, then the cupcakes are done. Turn the cupcakes out of the pan and allow to cool on a cooling rack.

When completely cooled, frost each cupcake with the frosting. Then sprinkle the remaining crushed candy canes, crushing more candy canes if needed.
Sweet!

If you’re not a big chocolate fan, a white cake mix and vanilla frosting can be substituted for the chocolate items. It will have a stronger peppermint flavor.

This is what I'll be making for our friends and family this year. I will be doing both the chocolate and white cake mixes. The best part about this recipe, beside the being super easy part, is that you can make a whole bunch of cupcakes at one time. And who doesn't love a cupcake?

sounds easy enough. i skimped on holiday baking this year with barely a good excuse. next year! i have this page bookmarked now. :)
