ANOTHER POST ABOUT SNOW?

After a snow day at home, I was able to make it to the office. I am one of the few. Surprisingly, it's sunny outside, albeit bitterly cold. The drive to the train station was not all that scary, but we were going at a slug's pace. This weekend is supposed to be really nasty. It'll make what we just had look small time. I may be stuck at home next Monday as well. Oh well, I have lots of things to keep me busy...and there's the ability to work from home thing.

So, instead of me rambling about the weather, I will share a recipe that I just learned from a friend. He made it for our company holiday party and it was a big hit. Not only is it super simple, but it's really delicious and it looks so fancy. It'll look like you spend hours preparing it. So here it is...

Sweet & Savory Baked Brie

Ingredients:
1 sheet Puff Pastry
1 wheel Brie (choose a larger size, keeping in mind that it has to be able to be wrapped by the puff pastry. But more importantly, it has to be round in shape)
2 TB Mango Orange Marmalade
1 Egg
Water

Directions:
Preheat oven to 375 degrees.

Thaw the puff pastry according to package directions.

After the puff pastry is completely thawed, it can be unfolded flat. Then take the marmalade and place in the center of the puff pastry. Take the wheel of Brie and place in the center of the puff pastry on top of the marmalade. At this time you may trim the edges to use later as decoration, or you may leave as is.

Beat the egg and add a small amount of water, usually about a 1 tsp to 1 TB, to make an egg wash. The consistency should be thin but not too liquidy. Brush the egg wash onto the edges of the puff pastry. This will help the puff pastry stick to itself in the next step.

Fold the puff pastry in from the sides, completely covering the cheese. If you have trimmed some puff pastry pieces off, feel free to stick them onto the top of the wheel at this time. You can use cookie cutters or cut into decorative shapes.

Then, brush egg wash over the entire surface. This will help create a shiny, golden brown surface.

Transfer the whole thing onto a baking sheet and place in the preheated oven.

Bake for 25 - 30 minutes or until the puff pastry is golden brown. Keep an eye on it to prevent over-browning (or burning).

When completed baking, remove from oven and transfer onto a serving platter. Serve warm with crackers or breads.

Brie is a French cheese that is widely available. This is also a very customizable appetizer. You can choose an herbed Brie. Instead of using marmalade, you can choose a different fruit preserves or even a chutney. Chopped nuts can be added for texture and taste.
