GO B-A-N-A-N-A-S-!

Three bananas were sitting on my kitchen counter. First they were a lovely shade of yellow with a hint of green. Then the green went away. Next emerged the spots. Then more brown spots. Then I had to do something with these bananas. And this weekend was a perfect time to bake.

Food Network: Banana Nut Muffins

I made these muffins and they turned out great. I did tweak the recipe a little by adding some cinnamon and freshly grated nutmeg.

Going through my recipes, I also came across this fake-it Banana Bread recipe from RS. I'd like to try this next time I'm loaded with over-ripe bananas.

But then again, they'd go great in Peanut Butter Banana smoothies as well...
